SMOKED TROUT & APPLE SALAD
SERVES 4 PREP 20 MINS
• 450g whole hot-smoked trout, skinned, boned, flaked coarsely
• 300g mixed sprouts
• 100g alfalfa sprouts
• 1 baby gem lettuce, leaves separated
• 1 small Granny Smith apple, cored, sliced thinly
• ½ cup walnuts, roasted, coarsely chopped
• ½ cup shaved pecorino
