CREAMY MUSTARD PORK

Pork escalopes are a much-overlooked tasty, lean and tender meat option and usually great value too.

SERVES 2

30g (1oz) half-fat Cheddar cheese, grated
2tbsp semi-skimmed milk
2tsp wholegrain mustard
200g (7oz) cherry tomatoes
4 pork escalopes
200g (7oz) Tenderstem broccoli
Handful of fresh basil leaves

1 Heat the oven to 200C/Gas 6. Mix the grated cheese with the milk and mustard.

2 On a non-stick or oiled roasting tin, put the tomatoes and put in the oven to heat up. Once hot, add the pork, topped with the cheese mixture and cook for 10 mins.
