SAKE-STEAMED CLAMS
This is a wonderful dish that can be made with very little effort if you are short on time. However, it’s important to prepare the clams properly to remove all grit and sand.

INGREDIENTS
• 30g sea salt• 4 cups cold water• 1kg clams• 30g fresh ginger, peeled & cut into thin matchsticks• 8 spring onions, cut into 5cm pieces & sliced into long thin strips• 150mL sake
