Cherry-Almond Oat Bars
MAKES 12
1 cup unsalted butter, softened
1 cup firmly packed light brown sugar
½ cup granulated sugar
1 cup almond butter
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1¾ cups old-fashioned oats, divided
2 teaspoons baking powder
1 teaspoon kosher salt
1 teaspoon ground cinnamon
¼ teaspoon baking soda
¾ cup chopped dried cherries
½ cup sweetened shredded coconut
¾ cup sliced almonds, divided
1. Preheat oven to 350°. Line a 13x9-inch baking pan with parchment paper, letting excess extend over sides of pan.
