Bake bread like a pro

SHE’S been singing the praises of sourdough for so long that some call Ciska Rossouw the sourdough whisperer. She mastered the art of baking sourdough bread when she opened Jordan bakery for well-known chef George Jardine in Stellenbosch.

Nowadays she runs her own bakery, Loaves by Madame Baker, in a new trendy foodie hub in Salt River,

Cape Town. The shop delivers bread all over the peninsula and the winelands, and Ciska also gives bread-baking classes.

SOURDOUGH BREAD

Nothing beats the taste of homemade sourdough bread.

MAKES 1 LARGE LOAF PREPARATION: 40 MIN (FOLDING AND SHAPING INCLUDED) RESTING: 1 HOUR 20 MIN RISING: 16-21 HOURS BAKING: 30 MINUTES

450g white bread flour
50g wholewheat flour
375g water
100g sourdough starter (see recipe below)
10g salt

1 Mix the two kinds of flour and the water.
