BEETROOT, WATERCRESS AND HAZELNUT SALAD WITH HORSERADISH DRESSING
This goes really well with oily fish. We make it for brunch as a side to our smoked mackerel kedgeree. You could add some Puy lentils to make it more substantial.
SERVES 4-6 AS A SIDE
80g hazelnuts, chopped
80g watercress
60g rocket
2-4 raw beetroots, peeled
HORSERADISH DRESSING
150g crème fraiche or soured cream 2tbsp creamed horseradish from a jar
Juice of ½ lemon, plus extra to serve
1tbsp olive oil, plus extra to serve
