250g plain flour, plus extra for dusting
Pinch of salt
150g unsalted butter, cubed and very cold
4 eggs
200ml double cream
200g Västerbotten cheese or other sharp, mature hard cheese, grated

■ Sift the flour into a bowl. Add the salt and butter and rub into the flour to form breadcrumbs.
