Gazpacho with Cheesy Pesto Croutons
SERVES 4, PREP AND COOK: 35 MINS + CHILLING
INGREDIENTS
1kg very ripe tomatoes, chopped
½ cucumber, diced
1 green pepper, diced
1 garlic clove, chopped
3 tblsps extra-virgin olive oil plus extra to serve
4 tblsps sherry vinegar plus a little extra
Tabasco, a few dashes
1 tsp caster sugar
¼ tsp crushed black peppercorns
