GLOBE ARTICHOKES WITH MUSTARD HOLLANDAISE

Yes, preparing artichokes does make a huge amount of mess, but they’re amazing to eat and so simple to cook. A lot of recipes use just the hearts, but for me that’s like not eating a boiled egg from the shell – it has a different taste and feel to it.

SERVES 4

4 whole artichokes
1tbsp wholegrain mustard
1tbsp Dijon mustard
200g hollandaise sauce
Sea salt and black pepper

1 Peel away a few of the outer leaves from the artichokes. Bring a large pan of salted water to the boil, drop in the artichokes and cook for 25–30mins, until you can easily push a small knife into the centre of each one.
