BERRY CREAM HEART STACKS
SERVES 4 PREP AND COOK: 20 MINS
2 x 360g packets pancakes (12)
Icing sugar mixture, for dusting
FILLING
250g tub spreadable cream cheese
2 tblsps icing sugar mixture
1 tsp vanilla bean paste
BERRY COMPOTE
2 cups frozen mixed berries (300g)
½ cup icing sugar mixture
¼ cup lemon juice
1 To make berry compote, stir all ingredients together in a medium saucepan over a medium heat. Bring to a boil. Reduce heat. Simmer for about 2 minutes, or until heated through. Transfer to a jug. Set aside.
