Squidgy banana cake with caramel cream cheese frosting
A delicious way to use up any overripe bananas.
SERVES 10 PREP 15 MINS COOK 50 MINS
✱ 175g butter, at room temperature
✱ 175g dark muscovado sugar, light brown sugar or caster sugar
✱ 3 eggs
✱ 1tsp vanilla extract
✱ 250g self-raising flour
✱ 275g peeled, overripe bananas, mashed
✱ 100g pecan nuts, chopped, plus extra pecan halves, to decorate
