When the invitation to join an Empty Esky campaign trip with travel company AAT Kings landed on my desk, I didn’t hesitate over who to nominate to go. Our newest team member, team were lucky enough to sample some of her bounty, back in the office. The sourdough bread made at the Flour Water Salt Bakery, and the delicious dips she picked up at the Nowra markets were a huge hit. One thing that really struck Jess was how beautiful so much of the region was, despite the devastating fires. ‘All the rain that fell recently meant there was plenty of greenery to enjoy,’ she said. ‘It felt really special to be witnessing the incredible resilience of so many people – and places. It was also great to get a taste of the amazing beauty Australia has to offer. I always knew it was big, but now more than ever, I know how much there is to see. And wherever I go, I’ll make sure I take an empty esky!’.
