Fish cakes

Makes about 24 fish cakes Preparation time 35 minutes Cooking time 15 minutes

Pickled fish is an Easter tradition. Use your leftovers to make these fish cakes – you can stretch a single portion of pickled fish to make a starter for six people.

You need

 3 – 4 big potatoes, peeled and in cubes
 pinch of baking powder
 pinch of salt
 3 tablespoons cream, warm
 500 g pickled fish (you can use ready-made fish)
 about ½ cup flour
 2 eggs, beaten
 1 cup dry breadcrumbs
 oil, for shallow frying
