Fish cakes
Makes about 24 fish cakes Preparation time 35 minutes Cooking time 15 minutes
Pickled fish is an Easter tradition. Use your leftovers to make these fish cakes – you can stretch a single portion of pickled fish to make a starter for six people.
You need
• 3 – 4 big potatoes, peeled and in cubes
• pinch of baking powder
• pinch of salt
• 3 tablespoons cream, warm
• 500 g pickled fish (you can use ready-made fish)
• about ½ cup flour
• 2 eggs, beaten
• 1 cup dry breadcrumbs
• oil, for shallow frying
