Lucknowi Biryani

India attracted the attention of several invaders and traders and with each set of visitors came their cultural and culinary influences. Let’s talk about the journey of biryani, which, since I am a Lucknowite, I find extremely fascinating. The word itself has etymological origins in the Persian word ‘ birian’, meaning ‘fried before being cooked’, though multiple theories abound about its actual origin. KT Achaya in his mentions that biryani has its precursor in pulao; however, the (a document that has records of the Mughal empire) makes no distinction between the two.
