Avocado and Salmon Tartare

YOU NEED
1 salmon fillet without skin (4 oz.)
1/2 tbsp Dijon mustard
3/4 tsp dill (chopped)
1/2 tsp kosher salt
Fresh black pepper to taste
1/4 cup red onion (chopped)
1 tsp extra virgin olive oil
2 tbsp apple cider vinegar
1/8 tsp fine garlic (chopped)
8 ounces avocado (diced from 2 small)
4 cups romaine lettuce (chopped)
1 1/2 cups red bell pepper (diced)
Red and yellow pepper for garnish
METHOD
• Dice the salmon into small cubes.
