When one refers to a dish of noodles, a piping hot soup or dry dish is often pictured. However, many Asian regions, which are cold soba noodles served with , or soy sauce; the Korean , which are thin, chewy noodles made with buckwheat and potato or sweet potato starch and served in a cold broth; and , or cold skin noodles, which are seasoned with a tangy and spicy savoury sauce, and is one of the most popular street foods in northwestern China. Eaten for centuries, cold noodles are often served slightly chilled â the perfect meal during hot summer months.
