Spiced apricot & chicken wild rice with pomegranate dressing

½ red onion, thinly sliced, plus ¼ cup white
vinegar, plus pinch sugar and salt
½ cup pomegranate seeds
¼ cup lime juice
3 Tbsp honey
2 kaffir lime leaves, stems removed, sliced
