Best-Ever Mashed Potatoes

Serves 6

2 large Russet potatoes
4 medium Yukon Gold potatoes
1 cup vegan butter, melted
1¼ cups plain unsweetened almond milk, room temperature
2 teaspoons salt
½ teaspoon white pepper

Preheat oven to 425 degrees. With a fork, deeply pierce potatoes a few times all around, and place on a parchment-lined baking sheet. Bake 45 minutes to 1 hour, until a paring knife easily passes through center.
