PAPAYA POWER BOWL

SERVES 2

INGREDIENTS

1 pink dragon fruit (see tip)
1 small orange papaya, halved lengthways, seeded
2 tbsp Natvia
¼ cup lime juice
1 small banana, sliced
1 kiwifruit, halved crossways
2 purple figs, halved lengthways
125g fresh or frozen raspberries
Cherries and lime wedges, to serve

METHOD

Wearing food-handling gloves, peel Chill papaya halves in freezer for 30 minutes. Process frozen dragon fruit with Natvia and lime juice until smooth. Divide dragon fruit mixture between chilled papaya halves or two wide bowls. Top with banana, kiwifruit, fig and raspberries. Serve immediately with cherries and lime wedges.
