Spicy Thai noodles with creamy peanut dressing

SERVES 2

• 200g rice noodles
• 1 carrot, julienned
• ¼ courgette, cut into ribbons
• ¼ red pepper, julienned
• ¼ yellow pepper, julienned
• ¼ mango, julienned
• 1 spring onion, chopped
• Handful of spinach

FOR THE PEANUT DRESSING

• ½ red• Few sprigs of basil, finely chopped• ½ lime• Black sesame seeds• ½ tbsp finely grated root ginger• 3 tbsp peanut butter• 1 tbsp maple syrup• 1 tsp apple cider vinegar• 80ml water• 1 tbsp tamarind soy sauce
