Raspberry + peanut butter mud slice

Kinda like a deliciously moist brownie, this slice pretends to be a decadent treat. But don’t let it fool you: it is sugar-free and packed with fibre for healthy digestion.

400g tin cannellini (or other white beans), drained and rinsed
½ cup (140g) peanut butter
1 cup (100g) almond meal
1 tsp baking powder
3 large eggs
2 tsp vanilla extract
⅔ cup (120g) granulated stevia
½ tsp sea salt
150g raspberries (frozen or fresh)
Peanuts, to scatter
