Drunken chicken
Serves 4 Preparation time 25 minutes Cooking time 1 hour 20 minutes
This dish has a delicious sauce, perfect for mopping up with a piece of crusty bread.
You need
• 15 ml butter
• 15 ml olive oil
• 4 slices of pork belly (400 g), cubed
• 2 carrots, peeled and chopped
• 2 celery stalks, chopped
• 12 small onions, peeled
• 4 chicken leg-and-thigh portions
• 30 ml flour
• 500 ml red wine
• 250 ml chicken stock
• 5 sprigs of thyme
• 3 bay leaves
• 15 ml butter
• 250 g button mushrooms, halved
• salt and freshly ground black pepper, to taste
