FREEZE OR DRY your ginger

SINCE moving to Newcastle ten years ago I’ve been striving to grow and preserve enough ginger to ensure that I never have to buy any. It’s not always available fresh from the garden, so I’ve been preserving it using a couple of simple methods that you also might want to try – freezing and drying.

Every May the ginger is at its prime and I begin to harvest in earnest. Both methods of freezing or drying are quite easy and well worth the effort, and with good preparation and planning you’ll never have to buy ginger again. Preserving ginger
