A fellow test cook’s grandmother sent in a metal mold measuring 10 by 3 by 3 inches for us to (French for “pâté in a pastry crust”). These molds come in many shapes and sizes, with most being rectangular or oval. To remove a pâté en croûte from a mold, simply remove the pins and separate the sides. The sides are textured—another defining feature—and leave a signature decorative imprint on the pastry.
