French Onion Soup

A CROCK OF savory-sweet French onion soup topped with crunchy croutons and bubbly cheese is as comforting as my favorite slippers. But here in the test kitchen, we’re never satisfied with the status quo, so I decided to take another look at this bistro favorite to see if I could create a recipe that cut down on the time needed to caramelize the onions and still produced a great soup.
