HAS the time finally come for crémants to carve a slightly bigger cut of the sparkling wine cake? These wines are generally regarded as potentially good value. The quality of these bubblies has been improving over the last couple of decades, and further impetus in that direction has seen the recent creation of tighter regulations for top cuvées in three of the crémant appellations.
