    KICK A$$ BAKED MACARONI & CHEESE

    Mac & Cheese

    from USA TODAY Bestselling Author Naleighna Kai

    Yes, my secret is nutmeg and heavy whipping cream)

    One pound of elbow macaroni or medium shells

    Cut the following cheeses into cubes:

    8 oz of mild cheddar

    8 oz of Colby

    8 oz of Monterey Jack

    (or 16 ounces of Colby Jack)

    1 small package of Velveeta Cheese (this is what actually adds the salt to the dish, this is actually sliced and goes on last.) I prefer to Use the Aldi’s or store brand as it’s labeled Vegetarian, but if you’re one of those types who likes the aged cheese instead, substitute for Smoked Gouda.

    4 eggs

    Heavy whipping cream

    Garlic powder

    Onion powder

    ½ teaspoon of nutmeg

    ½ teaspoon of black pepper

    (salt if preferred, but not too much—that cheese spread is salty)

    When the macaroni has boiled and is drained, while it’s still hot, add ½ stick of real butter, then season it with the garlic powder, nutmeg, and onion powder/

    Scramble the eggs and add the heavy whipping cream along with garlic powder, onion powder and black pepper into the mixture

    Put the macaroni in a pan, then drop in the cheese cubes making sure they are evenly distributed. Pour in the egg mixture and stir the entire contents so that it, too, is evenly distributed.

    Bake for 20 minutes so the aged cheeses melt; then stir (especially around the edges), and layer the Velveeta on top.

    Bake for another 20 minutes, you can leave as is or stir gently and then let it cool

    Sprinkle a little more nutmeg on for color.

    Alternates: half and half (but heavy whipping cream is preferred)

    Add pepper jack cheese to give it a zing.

    Gouda cheese to give it a smoky flavor

    Sour cream or Cream Cheese to give it a tart flavor

    Bread crumbs sautéed in butter and a touch of salt

    What do you mean she’s pregnant? Jai roared. She’s been in a coma ever since she arrived.

    He paced the length of his office and held his tongue. Several emotions fought for dominance and his assistant, Kelly, who had brought such horrific news, didn’t deserve his vocalized rage. The one emotion that overpowered all others was anger. A young woman who had been brought into the Chetan Health Center after a horrific highway accident a year ago, was now nearly eight months pregnant.     Jai took a long slow breath, exhaled, then whispered, So, I’m supposed to believe that one of our male employees impregnated a comatose patient in our care?

    Kelly averted her gaze, taking a pointed interest in the abstract artwork on the walls of his modestly furnished office. We don’t have any idea who it was.

    You know this has to be reported immediately, he said. A sinking feeling lodged in the pit of his belly. Call in the police, our lawyers, and put all of the male employees in the conference room. I need to give them a heads up.

    Jai agonized over the undeniable violation. A comatose woman? How vile. But the obvious sign that something had happened was there. She was carrying a child.

    Kelly placed the call, keyed something into her cell, then blinked, frowning as her green eyes scanned the screen. Do you know a Khalil Germaine?

    Khalil Germaine, his mentor and teacher from the time Jai had attended Macro University Prep. A man who had made a positive impact on his life and was the main reason he had chosen a career in holistic medicine. He was like a father to me, but what does that have to do with what’s happening right now?

    I just received a text from the front desk, she replied, turning her screen to face Jai. His son called and asked for you to come right away. He’s been shot and they have him in ICU.

    Jai stood frozen in the center of his office and a new set of emotions filtered through him—guilt, pain, sadness. Khalil had made several attempts at getting Jai to accept something he called becoming a King of The Castle.

    Jai finally found his bearings, but Kelly, who had kept her focus on him for those several moments, chimed in. If it’s who I think it is, then that’s considered family business. I can handle things here. She moved her hands in a shooing motion. Go.

    He grabbed his briefcase from one of the leather wingback chairs, saying, Call me the minute—

    Got it. Go!

    He stopped at the door and glanced at her over his shoulder. First, I think I need to address the men who work here. They’re about to be hit with all kinds of madness and I want them to be prepared.

    Sounds fair, she whispered, then gestured toward the hallway.

    Crusted Spinach Stuffed Chicken

    Ingredients

    *4 chicken breasts

    * Olive oil

    *Parsley

    * Seasoning Salt

    * Lemon Pepper

    *Garlic Powder

    *Onion Powder

    *Panko bread crumbs

    *4 ounces softened chive and onion cream cheese

    *Fresh baby spinach

    *Shredded Parmesan cheese

    *12 toothpicks

    *I Can’t Believe It’s Not Butter Spray

    Directions

    1. Preheat oven to 375º

    2. Soak toothpicks in cold water for 10 minutes so they don’t burn

    while cooking.

    3. In a bowl, add softened cream cheese and shredded Parmesan cheese

    and stir well until combined. Set aside.

    4. In a separate bowl, add parsley, seasoning salt, lemon pepper, garlic

    powder, onion powder, and panko bread crumbs. Mix well. Set aside.

    5. Use a sharp knife to cut a pocket into the side of each chicken breasts.

    6. Spoon in spinach and cheese mixture into chicken breasts evenly.

    7. Stick 3 toothpicks in each breast to secure the mixture inside.

    8. Drizzle olive oil on the outside of the breasts, making sure the chicken

    is fully coated.

    9. Roll each breast in the dry ingredient mixture, making sure the

    chicken is fully coated.

    10. Place the chicken breasts in 9x13
