Titleintroduction
If you’re like me, you express love through food. Sharing food is how we make new friends, how we stay connected with old friends, how we celebrate achievements, and how we show our love when there are grievances. Food brings people together after a long day of work or at weekend dinners with friends or family. Food is at the center of any celebrated holiday. Sharing a meal with loved ones is how we stay connected, and the better the food, the better the experience.
I had the greatest feeling of relief when I realized I could turn my extreme passion for food into a career. Fast-forward 15 years and I’m now an executive pastry chef, cookbook author, and dessert blogger. I live, eat, breathe, and sleep desserts. Don’t get me wrong, I love to cook other things, too, but dessert is my true passion. And of all the desserts in the world, nothing says love more to me than a homemade pie.
I have my grandmother to thank for that. She was a true homemaker, and on a visit to her house when I was a little girl, she made me a homemade pie using peaches from the tree in her backyard. I fell in love instantly. The juicy sweet peach filling was complemented by the all-butter, flaky homemade crust. I could taste the love in that pie. For years following that experience, I requested a peach pie for my birthday instead of a traditional birthday cake. Not long after that, I realized that I wanted to pursue a career in baking. They say if you love what you do, you’ll never work a day in your life. I can attest that statement rings true.
Pies are a staple celebratory food, weekend treat, or even a weeknight meal. They can be sweet, savory, open face, or even handheld. You don’t even need a pie dish to make a pie! Pie baking is a labor of love. It can sometimes seem intimidating, but it doesn’t have to be. When you break it down, pie is just a crust and filling. You can dress it up if desired, but even a humble pie is top notch, and that’s really all that matters.
Different seasons call for different pies. Different events call for different pies. Whether you’re making a pie for a loved one or just for a weeknight bake, all you need is a good, solid recipe. That’s where this book comes in. These recipes are a collection of great, tried-and-true recipes from various authors. In these pages, you can access not only the best crust recipes but also recipes for fabulous fruit pies, creamy pies, nutty pies, chocolate pies, savory pies, and more. These are the 50 best pie recipes out there. Everyone needs an essential cookbook in their repertoire, and this book is here to serve that purpose. Whatever type of pie you’re looking to make, and whether you’re new to baking or you’ve been baking for years, you’ve come to the right place.
