    Makes: 1 dozen

    Make sure to freeze these delicious meat loafs bursting with pizza-like flavor. They're perfect to heat up to enjoy a snack after school or a fast dinner during soccer night. My family loves to drizzle additional pizza sauce on the top.

    Ingredients

    Large egg. Lightly beat

    1/2 cup pizza sauce

    1/4 cup bread crumbs seasoned with salt

    1 teaspoon Italian seasoning

    1 1/2 pounds of ground beef

    1-1/2 cups shredded part-skim mozzarella cheese

    Optional: Pizza sauce , basil leaves and tomato.

    Directions

    Heat oven to 375°F. In a large bowl, mix first 4 ingredients. Add beefand mix lightly but thoroughly. Separate into 12 pieces and put each on the sides and bottom of a muffin cup that has been greased. Add cheese to the centers.

    Bake until the meat is tender, about 15 to 18 minutes. If you'd like, sprinkle with additional sauce and fresh basil prior to serving.

    Options for freezing: Freeze chilled slices of meat in containers for freezing. To use, let them partially defrost in the refrigerator over night. Microwave covered and at high setting using a safe dish for microwaves the food is cooked to.

    2. Zucchini Pizza Casserole

    Total Time

    Prep: 20 minutes. Bake: 40 min.

    Serves 8 portions

    My husband has a huge appetite, our kids are never bored of pizza and I also grow a lot of zucchini, which is why this delicious tomato casserole definitely a hit with us through the year. Once you've had the chance to try the recipe, you might even consider growing even more of zucchini inside your personal garden in the coming summer!

    Ingredients

    4 cups of shredded, unpeeled zucchini

    1/2 teaspoon salt

    2 large eggs

    1 cup of grated Parmesan cheese

    2 cups shredded part-skim mozzarella cheese, divided

    1 cup shredded cheddar cheese, divided

    1 pound of ground beef

    1/4 cup diced onion

    1 can (15 ounces) Italian tomato sauce

    1 medium sweet or sweet red pepper cut into pieces

    Directions

    Preheat oven to 400 degrees. Place zucchini in a colander; Sprinkle with salt. Ten minutes to sit before squeezing out the moisture.

    Mix eggs with zucchini, Parmesan and half the cheddar and mozzarella cheeses. Make a press in a greased 13x9in. or 3-qt. baking dish. Bake for 20 minutes.

    In a large pan, cook the beef and onions on medium-low heat until the it is not pink anymore. breaking up the meat into pieces then take them off and drain. Add tomato sauceand spoon over the zucchini mix. Sprinkle with cheeses remaining Add green pepper. Bake until the cheese is melted approximately 20 minutes more.

    Option to freeze: Cool the baked casserole, cover with plastic wrap and freeze. To use, let it partially freeze overnight in the refrigerator. Remove from refrigerator 30 mins prior to baking. Preheat oven to 350 degrees. Unwrap the casserole and reheat on a lower rack until heated to the point that an oven thermometer placed in the middle reads 160deg.

    Italian sausages or ground turkey can be submerged in this dish.

    It can be made vegetarian by omitting the meat and incorporating more vegetables. The finely chopped cauliflower or mushrooms (or an amalgam of both) are both delicious.

    Have a steak dinner served in a bowl by making this easy, delicious steak soup. Due to the cayenne pepper and chili powder this soup has a touch of spice, but it can be easily modified if you're cooking for children.

    Ingredients

    One carton (32 pounds) beef broth

    1 1/2 pounds of red potatoes cubed

    1 1/2 pounds of beef stew meat Cut into pieces of 1/2-inch

    1 box (16 pounds) fresh vegetables frozen of your preference, that have been thawed

    2 cups of water

    1 medium onion cut into pieces

    1 cup steak sauce

    2 tablespoons fresh parsley minced or 2 teaspoons of dried parsley in flakes

    1 teaspoon chili powder

    1 teaspoon cumin ground

    1 teaspoon of cayenne pepper

    Directions

    Combine all the ingredients in the 5or 6 qt. slow cooker. Cover and cook at a low temperature for 8-10 hours or until the steak and potatoes are tender. Option to freeze: Freeze the cooled soup in containers for freezing. To use, let it partially thaw in the refrigerator for a few hours. In a pan, heat while stirring frequently and adding water if needed.

    4. Lasagna Casserole

    Recipe yields 8 servings

    Growing up I remember this being the food I always wanted to have on my birthday. Mother created the sauce herself however, I prefer to make use of store-bought spaghetti sauce to cut down on time. Use ground beef instead of Italian sausage if you'd like more spice.

    Ingredients

    1 pound of ground beef

    1 cup of chopped onions

    1/2 teaspoon salt

    1/2 teaspoon of pepper, split

    1 pounds medium pasta shells cooked and then drained

    4 cups shredded part-skim mozzarella cheese, divided

    3 cups 4% cottage cheese

    two large eggs well beat

    12 cup of grated Parmesan cheese

    Two tablespoons of dried parsley in flakes

    1 jar (24 ounces) pasta sauce

    Directions

    In a large pan cook beef and onion on medium-low heat until the beef is cooked through and no longer pink. breaking the meat into small pieces Drain. Salt and sprinkle with 1/4 teaspoon of pepper to put aside.

    In the large bowl, combine the pasta with 3 cups mozzarella cheese, cottage cheese eggs Parmesan cheese, chopped parsley and the rest of the pepper. Transfer the pasta to a shallow dish that has been greased to 3 qt. or 13x9-in. baking dish. Add spaghetti sauce and beef mixture (dish will be filled).

    Then cover and cook at 350 degrees to bake for about 45 minutes. Sprinkle with the remaining mozzarella cheese. Bake covered, with the lid on, until cheese melts and bubbly has melty, another 15 minutes. Allow to stand for 10 minutes prior to serving.

    Freeze option: Sprinkle casserole with remaining mozzarella cheese. Cover and freeze casserole that has not been baked. For use, partially defrost in the refrigerator over night. Remove from refrigerator 30 mins prior to baking. Preheat oven to 350°F. Bake the casserole according to the recipe and then increase the time until it is cooked through and a thermometer in the center reads 165 degrees.

    1 serving 667 calories 30g of fat (14g saturated fat) and 157 mg cholesterol. 1209 mg sodium, 56g carbohydrates (12g sugars 4g fiber) and 44g of protein.

    5. Favorite Chicken Potpie

    Total Time

    Prep time: 40 minutes. Bake 35 min. + standing

    Two potpies are needed to make (8 servings per)

    This is the most delicious Chicken Potpie Recipe! It's chock-full of potatoes, chicken as well as corn and peas. this recipe yields two golden pies. So it is possible to serve one during dinner time and save the second to cook for an event.

    Ingredients

    2 cups diced and peeled potatoes

    3/4 cup chopped carrots

    1 cup butter cube

    1/3 cup of chopped onions

    1 cup all-purpose flour

    3/4 teaspoons salt

    One teaspoon of dried thyme

    3/4 teaspoon of pepper

    3 cups chicken broth

    1 1/2 cups whole milk

    Four cups of cubed, cooked, cubed chicken

    Directions

    Preheat oven to 425 degrees. Place the carrots and potatoes in a large pan and add enough the water until it covers. Bring to the point of boiling. Reduce heat and cook covered for 8-10 minutes or until tender Drain.

    In a large pan cook butter on medium-high temperature. Add the onion and stir and cook until soft. Mix in the flour and seasonings until they are blended. Slowly stir in milk and broth. Bring to boiling, stirring continuously until the mixture is cooked and stirred for two minutes, or till it becomes thick. Mix in the corn, peas, chicken and potato mixture. Remove from the heat.

    The pie crust is rolled out into two 9-in. pie plates. Trim them to fit by removing the rims. Add chicken mixture. The remaining crusts should be unrolled; then put them over the filling. Cut, seal with fluted edges. Cut slits on the tops.

    Bake 35-40 minutes , or until the crust has a light brown. Leave for 15 minutes before cutting.

    Option to freeze Cover and freeze the unbaked pie doughs. When ready to use, take them out of the freezer 30 minutes prior to baking (do not let them thaw). Preheat oven to 425 deg. Bake pies on baking sheets and cover edges with foil. Bake for 30 minutes. Reduce oven temperature to 350deg. Bake 70-80 minutes or until the crust is gold-colored and the thermometer placed into the center is reading 165 degrees.

    CHICKEN POTPIE TIPS

    How can I stop the crust of a potpie from becoming too wet?

    There are a variety of ways to avoid cake crust that is soggy! Here are some of our suggestions:

    For a pie with a single crust, make sure to prebake (or cook blind) the crust prior to filling it.

    The crust should be brushed with a egg white that has been beat. This helps keep the crust from leaking and also stop the filling liquid from getting inside the pie.

    Fill the dough with the mixture while it's hot. Place the dish inside the oven. The heat generated by it will aid in helping to set the crust.

    The pie is baked on the lower rack of the oven. Since the heat is concentrated at the bottom of the oven, placing the pie on the lower rack guarantees that the crust's bottom will cook crispy as well as golden brown.

    Do I need to poke holes into the pie's bottom crust?
