B efore I arrive at their house, I have already experienced the generous hospitality of Pam Brunton and Rob Latimer. I have laughed with pals over plates of Pam’s soul-affirming food and had my wine glass topped up by Rob. The couple’s widely acclaimed restaurant, Inver, has been the setting for birthday meals by the fire in the thick cloak of winter and long summer lunches overlooking a sun-speckled loch. The restaurant is soundtracked by Rob’s impressive vinyl collection, its shelves lined with well-thumbed books. I can’t help but feel as if I know them.

This is no accident. “When we started Inver, we filled it with our art and records so that it was decorated to represent us. We also had no money, and nowhere else to put our stuff,”
