HAGGIS CROQUETTES WITH TURNIP SLAW

INGREDIENTS
For the croquettes
• 500g/1lb 2oz potatoes, peeled and cut into quarters
• 25g/1oz butter
• 2 tbsp fresh chives, chopped
• 300g/11oz haggis
• 100g/4oz plain flour, seasoned
• 2 eggs
• A splash of milk
• 100g/4oz panko breadcrumbs
• Microgreens, to garnish
For the turnip slaw
• ½ medium turnip• 1 carrot• Juice of ½ lemon• 150g/5oz mayonnaise• 50g/2oz wholegrain mustard• Small bunch of fresh chives, chopped• Salt and black pepper
