Long Nguyen and Shauna Seaman are on a roll, despite sunsetting their popular Vietnamese-influenced food truck Pho King Rapidos in May so they could reopen the business in LoHi’s Avanti Food & Beverage, where fans can still find foil-wrapped pho banh mis and other fast-casual fare. Four months later, the couple debuted Thuy by PKR, an evolution of Pho King Rapidos housed in a sleek Park Hill space shared with Yuan Wonton and Sweets & Sourdough. Head to Thuy for more upscale plates of Nguyen’s fare than what you’ll find at Avanti, such as charred lemongrass pork over lavender-hued noodle salad and a pho-spice-rubbed, smoked short rib (pictured) served with beef broth simmered for 24 hours.
