Boy and lemon roast turkey
This golden turkey is brushed with infused butter and stuffed with lemon and bay for a flavoursome finish.

PREP 20 MINS COOK 2 HRS 20 MINS, PLUS RESTING
● 4kg frozen turkey, giblets removed, defrosted
● 6 bay leaves
● 2 lemons, halved
● 100g unsalted butter, softened
● 8 shallots, peeled
● 2 garlic bulbs, cut in half
● Extra herbs to garnish
Remove the turkey from the freezer a few days before serving and defrost in the fridge. On the day, take the turkey out of the fridge 1 hr before cooking. Put 2 of the bay leaves and the peel of 1 lemon in a small pan with half the butter and melt over a low heat.
