How can I find my ancestor's birth or baptism record?

Q William Westwood was a tailor in Edinburgh. In 1821 he married Jane/Jean Gibson (born 1789 in Perth, died 1863 in Midlothian) in Edinburgh. William died in 1843, aged 61 years.

I have a list of possible births and baptisms for), but how do I pick the right one? I have no information about who his father or mother were, or where he was born.
