Do you like saveloys? I love ’em! Haute cuisine they are not. They were originally made in Italy of pig brain (cervella) and are still called cervellato today, but I still love ’em.

There’s mention of a saveloy in Charles Dickens’ novel Fagin sits over a fire with “a saveloy and a small loaf in his hand”.
