WHAT’S PIQUETTE ABOUT?

I’ve come across piquette on some wine bar lists. What is this?

Piquette is a light, refreshing beverage made from pomace (the grape solids left over from the winemaking process). The pomace is rehydrated with water, extracting any remaining flavour, colour and sugar, to create a water and grape infusion which is then fermented, sometimes with the addition of sugar or honey. The result is a thirst-quenching, low-in-alcohol drink that traditionally would have been consumed by parched winemakers and vineyard
