Potted shrimps
This recipe epitomises a most elementary culinary idea: preserving a highly perishable foodstuff – little cooked prawns – by covering in butter and leaving to set. The end product, though, is far more toothsome than the very simple ingredients and process suggests – particularly when refined with spices and served on fresh toast.
