LIVELY CHAMPAGNE

Piollot Père et Fils - Colas Robin (Brut nature)

Nice compact and persistent foam. Intense straw color and discreet bubbles. The first nose is intense and fruity on peach in syrup with menthol freshness. Some notes of toast and undergrowth as well as flowers like the tiare Tahiti appear. Nice champagne with fresh vanilla and brioche flavors. The mouth is fresh with lively bubbles. There is salinity and a hint of acidity. Nice balance. Lively, this champagne has tension, minerality and floral notes. We find brioche and pine sap. The finish is light with a hint of bitterness. The end of the tasting is with white raspberry pulp and green apple.

Le Mesnil - Brut (Blanc de blancs)

Nice compact mousse. Straw gold color, fine bubbles. The nose is intense on coconut and peach, a monoi side with island flowers as well as jasmine are present. We also perceive notes of fresh hazelnut and almond. There is minerality. The palate is fresh, direct with salinity. We feel hazelnut. It's tasty with umami. The texture is nice and direct, it's dynamic. The finish is fresh, persistent with aromas of green plum, green apple and apple seed. It is refreshing. The umami continues on very light soy sauce aroma.

Benoît Cocteaux - La Grande Colette Chouilly Grand Cru (Blanc de blancs)

Nice compact mousse. Straw colour, very fine bubbles with nice effervescence. The nose is discreet on apple juice, pineapple and white fruits. There is also a floral side with freesia. Little by little, the nose opens up on plum and green fig. The palate is fresh with a nice liveliness due to acidity. Bubbles are dynamic. It's salivating, mineral with hints of plums. The attack is direct then the mouth softens and becomes silky and round. We find an almost biscuity brioche notes. The finish is lovely, lively and fresh with lingering salivating acidity. We end on an aromatic beautiful green apple.

John Charles Ricciuti - Blanc de blancs

Nice foam and pretty yellow gold color. The bubbles are fine, nice effervescence. The nose is intense on brioche, almost biscuity and yellow fruits as well as lemon. A yeasty, buttery side emerges, pleasant. We also have floral notes like honeysuckle. It's delicate, fragrant with a touch of citron. The palate is lively, buttery. There is tension with dynamic bubbles. We perceive notes of mirabelle plum, candied lemon, yellow apple as well as fresh cut grass. The acidity is present with a nice minerality. There is a nice balance, freshness and a tangy and salivating finish on the apple seed. A hint of salt completes the long finish.

Warner et Fils - L'Excellence (Blanc de blancs)

The foam is beautiful, compact and persistent. There is a lovely straw gold color with fine bubbles, nice effervescence. The nose is intense on yellow fruits, hazelnut, light soy sauce and flower honey. It's complex with little by little stewed apple and fresh fruit pulp that arise. It is round and fresh with a feeling of sorbet on the nose. On the palate, a buttery side appears on the attack with a hint of salt (salted butter) and a slight woodiness. We find the roasted hazelnut, the whole is fresh with an acidity that marks the attack and then fades. It is a wine with character because it has successive waves of aromas as well as evolving textures. Notes of baked apple accompany the salivating and mineral finish. The end of the tasting remains discreet with apple juice, seeds and bread crust aromas.

Didier Doue - Le Truchat (Blanc de blancs)

Nice compact and persistent foam. The wine has a straw-gold color with fine bubbles. The nose is delicate, floral on apple blossom. We also have fruits: apple juice, pear and lemon zest. There is a nice freshness, a slight menthol and we perceive notes of brioche. The mouth is fresh with a tangy attack. The bubbles are lively with lemony acidity and minerality. The mid-palate is buttery with notes of brioche but also fruity with pineapple and apple flavors. The texture is frank with a slight astringency of the green apple skin then we leave on a salivating velvety texture. There is a hint of umami on the finish. There is a nice overall balance.

M.G. Heucq - Le Clos des Goulots (Blanc de noirs)

Nice compact mousse. The champagne has a light straw color that tends towards rose gold. The bubbles are fine, nice effervescence. The nose is intense with a lovely icy freshness. We have a white cherry side but also ripe pear notes. We perceive some aromas of brioche and vanilla beans. Little by little touches of crushed blackberries and cherry blossoms appear. The nose is certainly intense but it is balanced. There is complexity with the minerality that emerges, a little smokiness and a hoop of nuts. In the mouth the bubbles are light.
