1. In 4-qt saucepan fitted with candy thermometer, heat 8 cups whole milk and 1 tsp kosher salt on medium, stirring occasionally, until milk reaches 185°F to 190°F, 13 to 17 min.
Remove from heat, then and 2 Tbsp . Let sit 20 min.
