Cast-Iron Skillet Corn Dip

THE POPULAR Mexican dish esquites—roasted corn kernels tossed with mayonnaise, cheese, chile, and lime—is a dynamic mix of sweet, creamy, bright, and spicy. This recipe takes those flavors and translates them into a hot, creamy, cheesy dip fit for a party. And making it is as easy as browning corn in a skillet and stirring in the rest of the ingredients.

Start by cutting the kernelsdone, add scallions and garlic to the skillet to bloom for about a minute. Then turn off the heat and return the first batch of corn to the skillet.
