At 17 Brasseur signed up for Du Touquet hotel school in northern France and then worked in Michelin-starred restaurants in the south, as well as at Alain Roux's The Waterside Inn in Bray, UK. He loves cooking light Med cuisine on board. One of his most popular dishes is a seafood platter, with marinated salmon, crispy skinned sea bass, steamed daurade, grilled langoustines, scallops and prawns; served with hollandaise, sweet chilli sauce and a lemon and peperoncino dressing. Based in Costa Rica when not on board Illusion V, Brasseur runs his own bakery, Madame Baguette.
