Minted cucumber sandwiches

A nostalgic flavour that we couldn’t resist including in our spread. Serving cucumber with soft cheese and mint intensifies the fresh flavour.

MAKES 16 READY IN 10 mins

✱ ½ cucumber ✱ 10g fresh mint leaves, finely chopped ✱ 6tbsp soft cheese ✱ 8 medium white bread slices ✱ Plain crisps and salad cress, to serve

1 For the cucumber sandwiches, use a peeler to remove strips – but not all – of the cucumber skin. Slice the cucumber thinly and sprinkle with sea salt. Leave for 10 mins before blotting with kitchen paper.

2 Mix the mint into the soft cheese, then spread over the white bread. Arrange the cucumber on top of half the bread slices and top with the other slices. Cut each diagonally into quarters or finish with the ham sandwiches.
