Citrus, Pineapple & Coconut Scones

Makes approximately 12

Plump scones, flavored by pineapple, shredded coconut, and fresh lemon and orange zests, make the perfect accompaniment to a cup of tea. Serve these tropical-inspired bakes with clotted cream and lemon curd for added deliciousness.

2 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
2 teaspoons fresh lemon zest
2 teaspoons fresh orange zest
½ teaspoon fine sea salt
¼ cup cold unsalted butter, cubed
½ cup crushed pineapple, drained
⅓ cup unsweetened shredded coconut, toasted and minced
1 cup plus 1 tablespoon cold heavy whipping cream, divided
½ teaspoon vanilla extract
