Turning wee drams into profits

On Burns Night, at the end of January, I found myself holed up inside the Tower of London on a wet and blustery evening. My fellow whisky enthusiasts and I had come together to toast the Speyside Distillery’s limited-edition Spey Royal Choice at a tasting organised by cask whisky specialists Cask Trade. A few weeks later, I found myself talking to Cask Trade’s founder, Simon Aron, on a sunny Friday morning at the firm’s offices on Regent Street. It is like a sweet shop for adults. Rows of toffee- and caramel-coloured whisky samples line the shelves, a few tantalisingly labelled “Secret”. I ask Simon what that means. He says
