HONEY-MUSTARD CHICKEN WINGS

A tangy, stir-together sauce with two mustards is the not-so-secret coating that creates these finger-licking wings.
12 chicken wings, cut into drumettes and flats, wing tips discarded
1 teaspoon kosher salt
½ teaspoon ground black pepper
¾ cup stone-ground mustard
⅓ cup honey
¼ cup Dijon mustard
2 tablespoons mayonnaise
1. Position oven rack in upper third of oven. Preheat oven to 425°. Lightly spray 15-inch cast-iron skillet with cooking spray.
2. In a large bowl, stir together chicken, salt, and pepper. Place on prepared pan. Bake for 15 minutes.
3. In a medium bowl, stir together stone-ground mustard, honey, and Dijon; reserve half of mixture in a small bowl. Brush chicken with remaining mustard mixture.
