Farro, Lentil, Tomato, Prosciutto and Burrata Salad
This is the simplest of dishes, with a flavour and texture combination that really shines. If you can’t get hold of farro, cooked brown rice, risoni pasta or couscous would all work well!
DRESSING
3 tablespoons red wine vinegar
1 shallot, finely chopped
3 tablespoons extra-virgin olive oil
2 teaspoons runny honey
1 clove garlic, crushed
½ teaspoon chilli flakes
sea salt and ground pepper
SALAD
1 cup farro perlato
¼ cup slivered almonds, toasted
400-gram tin black lentils, drained and rinsed
3 large heirloom tomatoes, thickly sliced
150 grams prosciutto
125-gram ball burrata, drained and torn into pieces
