Grilled red pepper and chilli jam

MAKES 2-3 x 230ml jars

This is a recipe my mum put me onto during a recent summer visit back home to New Zealand. It is so good that she continuously has it made up and ready for any impromptu visit from a friend. It’s best served with cheese, crackers and wine, but I’m sure you’ll find lots of other scrumptious uses for it.

INGREDIENTS

2 large red peppers120g long red chillies3 cloves garlic, peeled1 small red50g fresh ginger, peeled and finely grated1 lime, grated zest and juice260g caster sugar140ml white wine vinegar or distilled white vinegar
