Golden pancakes with sweetcorn salsa
For a savoury twist, try this recipe from Katy Beskow’s new book (£20, Quadrille)… Stir together 100g plain flour, a pinch Heat 1 tbsp sunflower oil in a frying pan over a medium-high heat then add the batter with a ladle, cooking for 1–2 mins before flipping. Repeat with the remaining oil and batter, keeping the pancakes warm as you go. In a bowl, mix 3 x 198g tins of drained and rinsed sweetcorn, 1 finely diced red pepper, 4 finely sliced spring onions, 2 ripe finely diced tomatoes, a handful of coriander and small handful of finely chopped flat-leaf parsley. Squeeze over juice of an unwaxed lime and season with a pinch of smoked sea salt. Load the salsa into each pancake, fold and serve with a wedge of lime.
