MAKES 10 X 7CM TARTS

For peanut caramel, put 210g caster sugar in a saucepan over medium heat. Stir until sugar first melts, then begins to caramelise. Continue cooking and stirring until caramel reaches an evenly dark golden-brown. Add 120ml thickened cream and 90g unsalted butter. Be careful – it can splatter!
