LEMON HERB AND PROSCIUTTO-WRAPPED CHICKEN

6 x 250g chicken breast fillets
12 slices prosciutto
LEMON HERB STUFFING
3 slices white bread (100g), torn
3 green spring onions, finely chopped
2 tsps finely grated lemon rind, plus wedges to serve
50g butter, melted
1 To make stuffing, process bread, onions and lemon rind in a food processor to form fine crumbs. Season with salt and pepper. Add butter. Pulse to form a paste.
2 Season chicken with salt and pepper. Press 2 tblsps of stuffing firmly on top of each fillet. Wrap each loosely in 2 slices of prosciutto, tucking ends under. Place in an oiled, large roasting pan. Spray with olive oil.
